Fortified Wines
Ports and Sherries are both fortified by adding brandy during the fermentation process. Sherries tend to be made with white grapes and the wine is allowed to fully ferment before being fortified with brandy, giving a dry fortified wine. The majority of port is crafted from red grapes; brandy is added during the fermentation process, killing the yeast and retaining a level of grape sugars, which makes port a sweet fortified wine.
